- A L’Olivier Olive Oil
- Potatoes (skin on)
Preheat oven to 180°C. Place your potatoes in a dish with half a cup of water and put into the microwave. To ensure your potatoes don’t burst from the heat, poke holes in each potato with a fork.
Once the potatoes are soft (this can take some time depending on the strength of your microwave), remove from microwave and place on the baking tray. Using the base of a mug, gently squish/flatten the potatoes. Drizzle A L’Olivier Olive Oil over the potatoes, then generously sprinkle the Henry Langdon Australian Lemon Myrtle & Sea Salt Rub over the potatoes. Place in the oven and cook for approximately 30 minutes, or until crisped to your preference.
Once cooked, use as a crispy delicious side for any dish.
