Roasted Eggplant with A L'Olivier Lemon Oil

Ingredients:

1 large egg plant

Finely chopped parsley

3 tbs A L’Olivier Lemon Extra Virgin Olive Oil

1 tbs of Henry Langdon Cracked Black Pepper Sea Salt Rub 

Directions:

Pre-heat the oven to 200°C. Line a baking trap with baking paper or lightly grease.

Slice egg plant and brush both sides with A L’Olivier Lemon Extra Virgin Olive Oil and season with Henry Langdon Cracked Pepper Sea Salt Rub.

Roast in oven for 25 to 30 minutes or until golden brown. Add a drizzle of A L’Olivier Oil and garnish with some finely chopped parsley!
